Super Filling Meat Free Bolognese



I want to eat more meat free meals in 2017!  We have had this before and you really don’t miss the meat 🙂 I serve it with rigatoni as that is my fave pasta but of course would work with any!

Serves 4

You will need: 

  • 1 onion chopped
  • 2 carrots, grated
  • 2 tsp lazy garlic
  • 200g sun dried tomatoes
  • 800g passata
  • 3 tbsp tomato puree
  • 2 x 400g tins of green lentils (drained)
  • pinch of salt and pepper
  • 1 tsp basil
  • 1 tsp oregano
  • 1 bay leaf
  • 400ml water
  • 1 tsbp sugar
  • Spray oil


Let’s Cook it!

  1. In a heavy based pan heat some spray oil on the hob, when hot add the onion, garlic and carrot and heat on low until starting to soften.
  2. Next add the rest of the ingredients, bring to the boil and simmer for 1 hour, stirring occasionally – you might need to add more water.
  3. When ready boil the pasta of your choice and serve.
